I was recently invited by the lovely Rekha Jain, and her husband, Jitendra Jain, to attend the grand launch of Celebrity Chef, Harpal Singh Sokhi‘s restaurant ~ Twist of Tadka!

Here’s a simple, fun recipe from Chef Harpal Singh’s website.

Watermelon Imli Ka Salad
{Sweet tangy Indian style watermelon salad}

Ingredients:

  • watermelon, peeled, seeded, and cut into 1-inch pieces
  • tamarind paste 2 tbsp
  • juice of lemon
  • black salt 1/4 tbsp
  • chaat masala 1/2 tbsp
  • red chilli powder 1/2 tsp
  • salt to taste
  • oil 2 tbsp
  • red chilli flakes for sprinkling
  • a mint sprig for garnishing

Method:

  • To make the dressing ~ blend tamarind paste, lemon juice, black salt, chaat masala, red chilli powder, salt, and oil
  • Place the watermelon cubes in a bowl. Add the dressing and mix well.
  • Transfer the salad to a serving bowl. Sprinkle some chilli flakes and garnish with a mint sprig and serve.
