Sustainable and Organic Dining at Fava

SUSTAINABLE AND ORGANIC DINING AT FAVA

The concept of dining at Fava is based on sustainability and good health ~ Review

With a spectacular view of the grand amphitheatre, a beautiful fountain area, and the expansive greenery of Cubbon Park in the backdrop, Fava is an upscale Mediterranean restaurant and bar owned by celebrated chef and entrepreneur, Abhijit Saha. Located at UB City in Bangalore, Fava’s posh neighbourhood serves as a prelude to the epicurean journey you will experience here.

Just like intricately woven tapestry, the menu at Fava pays keen attention to detail, bringing to its guests a remarkable selection of the classics as well as innovative dishes from the beautiful Mediterranean isles. The carefully designed menu represents the refined subtleties of European cuisine with the charming rusticity of its equivalents across the cerulean sea.

I was recently invited to an exclusive preview of the #newmenu at Fava by foodie cum gourmand, Chetan Kamani. My visit to Fava helped me realise that there is so much more to good food than flavours, aromas, and presentation. In fact, the working definition of good food lies in its ability to be produced, processed, distributed, and disposed of in ways that foster sustainability and support local economies. This archetypal restaurant has set extremely high standards for its competitors by bringing accountability to the environment into the culinary race. From sourcing fresh, organic ingredients directly from the growers to the dining patterns which are inclined towards renewability; this refreshing approach of Fava and its immaculate ethos stirs a sense of rejuvenation when you step into this fine dining restaurant.

With no dissuasion from its commitment to exemplary dining and nightlife, and a renewed approach towards its philosophy of sustainability, Fava has donned a new garb while promising the same richness of soul in the prudently designed new menu. With a chic new look and a splendid Alfresco bar, Fava is all set to impress!

Take a seat by the teal French windows soaking in the restaurant’s breath-taking views while you sip on Turkish coffee under the beautifully lit up custom-designed chandeliers. Fava’s spanking new airy ambience ushers in a delightful sense of movement, vibration, and life as you take pleasure in both the impeccable service as well as the gourmet meals.

In the mood to eat, drink and just relax in an amazing Alfresco area? Then witness the true grandeur of UB City at the ever so popular ‘Fava-Deck’; where you can lose yourself to the foot-tapping music of their resident DJ, explore new and creative concoctions or nitrogen-infused cocktails at their full-service bar, or simply watch a laid back afternoon turn into a groovy evening as the sun softly retreats into the horizon. Their new outdoor tables have been set up to create an intimate dining experience as you savour the “Fava Experience” with your loved ones under a star-lit sky.

The exciting new menu at Fava boasts delectable appetisers like the Baked Mini Gozleme Pies which use organic Swiss chard and ricotta or grass-fed lamb for the stuffing. Then there is the must-try Plated Smoked Salmon Labneh as well as the Dozen Mezze which includes twelve hand-picked vegetarian Mezze from across the Mediterranean. Father Michael’s Valombrossa Burrata with the Mapletree Farm organic beetroot Mezze is another starter that you wouldn’t want to miss. For the main course, relish the Mediterranean Style Stir-fry with Millet and Black Rice Risotto, Herbed Chicken Scaloppini or the Pistachio and Walnut Crusted Halibut obtained by deep-sea fishing. The sinful desserts at Fava include the Caramel and Chocolate Flan ~ a sure winner when it comes to presentation, and the delightfully flavoured Black Pepper & Chia Seed Pannacotta with Red Grape. Fava has also launched ‘Minus 196 Degree’, a first of its kind Liquid Nitrogen Infused Ice-Cream, in Bangalore!
