To note: You will need natural green tea powder to make this cake, which is available in most Asian grocery stores. If not, it can be found online. The Japanese label will read as ‘Matcha’ and the Korean one as ‘Nokcha Karu’. A reminder that this has caffeine in it for those who are on an off-caffeine diet.
Ingredients
- Eggs ~ large {2 nos.}
- Flour ~ 1 cup
- Sugar ~ 2⁄3 cup
- Butter ~ 1⁄2 cup
- Green tea powder {Matcha} ~ 1 tablespoon
- Baking powder ~ 1⁄2 teaspoon
If you don’t have cake flour and need to substitute all-purpose flour in this recipe, then you need to use LESS all-purpose flour.
Preparation
- Cream the butter well in a bowl. To this, add sugar and mix well.
- Beat the eggs together in another bowl using an electric mixer until the volume doubles or triples. Add the beaten eggs gradually to the above mixture and stir well.
- Sieve flour, green tea powder, and baking powder and add them to the egg mixture.
- Pour the batter into a buttered loaf pan {you may use parchment paper or grease-proof paper instead as they are hygienic}.
- Bake in a preheated oven {340 degrees F /175 degrees C} for about 30-40 minutes or until a toothpick inserted in the centre comes out clean.
