So, what is so magical about green tea powder?

Matcha is not a fluffed uptrend; it has been the flavour of Zen Buddhism, tea ceremonies in Buddhist temples and ancient China for aeons. For all my health-conscious readers, you need to know that Matcha green powder, which is rich in antioxidants, will be the answer you are looking for when it comes to enhancing your mood and detoxifying and relaxing your body.

With ‘satori’ and meditation becoming popular, Matcha’s natural properties are beneficial to be ‘in the moment’. Furthermore, the potency of drinking Matcha tea and its healing properties ~ works on all levels; physical, mental, emotional, and spiritual ~ bringing about a calming and soothing effect on the mind, body and spirit.

Additionally, a cup of Matcha tea is energising and it works well on the lines of daily detox. And, the flavour is superior to green tea. So, for those who are consuming green tea for health reasons ~ a switch to Matcha tea is the answer.

Ready to try your new favourite Matcha-based snack?

Keeping the healthy and healing properties of Matcha in mind, I’d encourage you to indulge yourselves with this moist and delicious Matcha {Green Tea} Cake!

To note: You will need natural green tea powder to make this cake, which is available in most Asian grocery stores. If not, it can be found online. The Japanese label will read as ‘Matcha’ and the Korean one as ‘Nokcha Karu’. A reminder that this has caffeine in it for those who are on an off-caffeine diet.

Ingredients

  • Eggs ~ large {2 nos.}
  • Flour ~ 1 cup
  • Sugar ~ 2⁄3 cup
  • Butter ~ 1⁄2 cup
  • Green tea powder {Matcha} ~ 1 tablespoon
  • Baking powder ~ 1⁄2 teaspoon

If you don’t have cake flour and need to substitute all-purpose flour in this recipe, then you need to use LESS all-purpose flour.

Preparation

  • Cream the butter well in a bowl. To this, add sugar and mix well.
  • Beat the eggs together in another bowl using an electric mixer until the volume doubles or triples. Add the beaten eggs gradually to the above mixture and stir well.
  • Sieve flour, green tea powder, and baking powder and add them to the egg mixture.
  • Pour the batter into a buttered loaf pan {you may use parchment paper or grease-proof paper instead as they are hygienic}.
  • Bake in a preheated oven {340 degrees F /175 degrees C} for about 30-40 minutes or until a toothpick inserted in the centre comes out clean.

A Moist, Dense Matcha Cake with a Crunchy Outer Layer!

The end result is divine; a soft and spongy green tea cake ~ not too sweet and so flavourful! This recipe has always been a hit with my friends and family, and I have to say that there is nothing to beat that distinctive aroma of green tea that pervades my kitchen and home after baking a Matcha Cake! So, what is it that’s stopping you from pepping up your culinary skills and springing a fresh surprise on family and friends?
